What's In It?

  • 500g Char-grilled chicken tenderloins
  • 1 tbs Olive Oil
  • 400g Diced pumpkin
  • 1 bag Mixed lettuce leaves
  • 1 cup Crumbled feta
  • ½ cup Chopped walnuts
  • 1/4 cup Olive oil
  • 1 tbsp Balsamic vinegar

Let's Get Cooking

  1. Boil pumpkin for 4-5 minutes or until just tender. Heat a frying pan over high heat with a small amount of olive oil.  Cook pumpkin, stirring, for 5 minutes or until light golden
  2. In a large bowl combine all the salad ingredients except the chicken and walnuts.
  3. Mix your dressing ingredients and place to side.
  4. Cut your chicken tenderloins in half and coat with a small amount of olive oil place over a very hot grill plate for 3-4 mins each side or until just cooked through.  This will vary depending on the heat of your BBQ and size of your pieces.
  5. While the chicken is cooking mix your salad with the dressing and divide between four plates. Sprinkle your walnuts across your prepared salad.
  6. Add your cooked chicken to serve.
